Creamy Avocado Pasta with Sun-Dried Tomatoes and Spinach

Ingredients

2 ripe avocados, pitted and halved
1/2 cup chopped sun-dried tomatoes
1 cup fresh baby spinach
1/4 cup fresh basil leaves
cloves garlic, minced
1/4 cup lemon juice
1/4 cup olive oil
1/2 cup vegetable broth (or water)
Salt and pepper
Instructions
1. Cook the pasta according to the package instructions. Continue with remaining steps while pasta cooks.
2. In a blender or food processor, combine avocados, sun-dried tomatoes, spinach, basil, garlic, lemon juice, olive oil, and vegetable broth.
3. Blend until smooth and creamy, adding more broth or water if needed to achieve desired consistency.
4. Season with salt and pepper to taste.
5. Drain the pasta and return it to the pot.
6. Pour the avocado sauce over the hot pasta and toss to coat evenly.
7. Serve immediately and with additional fresh basil leaves for garnish (optional).
8. Tip: For a richer flavor, add sprinkle of nutritional yeast or grated Parmesan cheese on top before serving.
