Lauren's Chicken Pot Pie

Ingredients
2 item Pillsbury/Giant brand pre-made pie crusts-top & bottom

butter
1/3 cup diced yellow onions
2 item medium carrots, sliced (about 1 cup)
1 item stalk celery, sliced (about 1/2 cup)
2 item cloves garlic, minced
Or use pre-minced garlic.
1/3 cup all-purpose flour

fresh minced thyme

fresh minced Italian parsley

2 cup chicken broth
1 cup heavy cream
1/3 cup frozen peas
6 cup shredded chicken
I use 2 Costco Rotisserie Chickens.
1 item large egg, beaten, for egg was on top crust
Instructions
1. Pre-heat oven to 400F.
2. Remove pie crust from refrigerator.
3. Roll pie crust on a lightly flourered surface-about 12-inch circle.
4. Transfer crust to 9" pie pan.
5. Pat smooth with your fingers.
6. Trim overhang.
7. Set aside & make the filling.
Filling Instructions
1. Heat butter over medium-high heat in large skillet.
2. Add onions, carrots, celery, garlic and cook until tender, stirring occasionally, about 15 minutes.
3. Whisk in flour, pepper, thyme, parsley, chicken broth, and heavy cream.
4. Whish until there are no flour lumps.
5. Simmer over medium-low heat for 10 minutes or until sauce has thickened.
6. Stir in shredded chicken and frozen peas.
7. Remove from heat and let cool slightly.
8. Add filling to pie pan.
9. Roll out top crust on a lightly floured surface-about 12-14-inch circle.
10. Trim overhang & seal edges by crimping/pinching with a fork or your fingers.
11. Using a sharp knife, vent the crust by slicing a few small slits in the center of the top crust.
12. Beat the egg and brush over the top crust.
13. Bake for 25 minutes and check if crust is browning too much.
14. Add foil to cover top crust and bake for another 20-35 minutes until crust is golden brown.
15. Remove from oven and let sit for 5-10 minutes to cool.
16. Slice and serve.
